The temporary manager of a "traditional pub" has been told "major improvement is necessary" after a recent inspection found raw meat was stored “touching” cooked meats.
The Coach and Horses in the High Street, Rickmansworth, was given a score of 1/5 when it was inspected on May 4.
When the grade was officially released in the week beginning June 5, the pub was told that "major improvement is necessary" in the management of food safety.
Cleanliness and condition of facilities and the building was marked as "improvement necessary" and hygienic food handling was rated as "good".
John, the pub’s holding manager who was brought in after the inspection, told the Watford Observer the inspection came at a “bad time” when the pub was going through a change in management and did not have a head chef.
He added: “We have a new head chef starting and we are waiting three months for the inspector to come back out and see the changes.”
In the report, seen by the Watford Observer, it was revealed inspectors did not find a hot water supply to any hand wash basins in the kitchens or bar.
It was requested that kitchen floors be thoroughly cleaned as well as the fridge and freezer, including their seals, doors, handles and touch points.
Some food items in the salad bar were found to be kept above eight degrees but the inspector said high risk foods need to be stored at eight degrees or less, or only kept for four hours maximum.

Inspectors also found: “Raw meat and raw fish boards are stored touching cooked meats and ready to eat boards.”
The pub was told it must separate the two to avoid cross contamination.
During the visit, inspectors also found two items that had a use by date of May 3, and the pub has been asked to check that all foods are now in date.
The rear storage also came under fire from inspectors for the structure not being “pest proof”.
The prevention of pests came up a further two times, when the pub was ordered to clean debris down the side of the walk-in chiller and dispose of waste items.
