The Watford Observer understands the restaurant will take over the former Gourmet Burger Kitchen unit in the High Street.
The new location will span 3,500 square feet of the 1.4 million square atria Watford, and is set to create 25 new jobs.
Haute Dolci's menu features a variety of treats including waffles, crêpes, pancakes, ice cream, macaroons, chocolate-dipped strawberries, and cakes.
It also offers cocktails, milkshakes, coffees and a vegan menu.

The announcement was paired with the opening of another atria store, Moss.
Steve Gray, from Global Manual, which manages atria Watford, said: “We’re delighted to welcome these new names to atria Watford.
"Both brands bring luxury products - which we know our visitors will enjoy.
“We look forward to working closely with our new additions to build upon the positive performance we’ve already seen at the centre in 2023.”
